Sweet potato or White? And a Killer Baked Potato Recipe
White potato or sweet potato? Which is better? It probably goes to the sweet potato because it got more fibre, more minerals, more vitamins, and it's lower GI. But they both still are really good foods. White potato has still got plenty of vitamins and minerals. As long as you don’t deep fry it, they're both pretty good. Sweet wins, but that doesn't mean white loses. It's more like a close second.
So I go 50-50, I have half of each.
But I think what's more important, than the potato you choose is how you cook it. Deep fried, and chipped not so much. Baked, boiled, roasted, or mashed yes.
Oh and Leave the skin on. The skin is the best bit.
Jacob's Super Simple Baked Potato
4-5 Small whole potatoes skin on
2-3 Small Sweet potatoes skin on
Place them in a bowl and coat with
- Sea salt
- Ground pepper
- Chilli flakes
- A generous drizzle of olive oil
Shake to coat all the potatoes.
Place directly on the oven racks (place a tray and baking paper below to catch the drips) in an oven pre-heated to ~200º (fan forced) and bake for 40-60 minutes (test them by pressing with a fork, they should be soft(ish) to the touch.
Goes great with a dollop of sour cream and a Mexican salad of spinach, black beans, corn kernels, tomato, cucumber and capsicum
